Raspberry Tart ♥️⁣ ⁣ Happy Thursday, everyone! Sending lots of love ♥️♥️♥️⁣ ⁣ ⁣ Ingredients ⁣ Crust ⁣ 1 1/4 cups all purpose flour *150g⁣ 1/4 cup almond meal *28g⁣ 1/4 cup powdered sugar *35g⁣ 90g cold coconut oil or dairy free butter ⁣ 1/2 tbsp cold almond milk *7g⁣ 1 tsp vanilla extract ⁣ 1/2 tsp sea salt ⁣ ⁣ ⁣ Filling ⁣ 150g raspberries ⁣ 1/4 cup lemon juice *60g ⁣ 1/4 cup maple syrup (adjust to taste) ⁣ Zest of 1 lemon⁣ 1/2 tsp agar agar powder ⁣ ⁣ ⁣ Crust ⁣ Preheat oven to 180c. In a food processor, add crust ingredients pulse until a dough ball forms. Refrigerate the dough for at least 10 minutes. Roll out the chilled dough, cut the pieces using a tart ring and assemble. Then cut out the strips. Lift the strips and place them on the inside of each tart ring. Bake at 180c for 15-18 minutes. Allow to cool completely.⁣ ⁣ ⁣ Filling ⁣ Add the berries, lemon juice, lemon zest into a saucepan, cook on a medium heat. Mash the berries as they begin to heat up. Add agar powder and cook until dissolved. Whisk in maple syrup, continue to simmer for 1 minute. Strain mixture through a fine mesh sieve *optional. Whisk in the chia seeds. Let cool completely. Sugar-free cinnamon buns🤩 Dough: 1/4 ounces dry yeast 1/2 cup warm water 1/2 cup hot milk 1 1/2 tbsp @splenda 5 tbsp butter melted 1 tsp salt 1 egg beaten 4 cups flour Filling: 1/2 cup butter melted 1/2 cup @splenda 2 tbsp ground cinnamon Glaze: 3/4 cup @splenda 2 tbs cornstarch 2 ts milk 1/2 ts vanilla extract Lightly oil a bowl to use for the dough to rise in. Set this aside. In a small bowl, dissolve the yeast into the warm water. Allow this to sit for about five to seven minutes while you continue to work. It will thicken while you work. In a mixing bowl, mix together the hot milk, Splenda, butter, salt, egg and 2 cups of flour. Add the yeast mixture and then slowly add the remaining flour a half cup at a time, stirring between additions. When this is ready to knead, knead this for 5-7 minutes and then place this into the lightly oiled bowl. Coat the dough with additional oil, cover the bowl with a towel and allow to rise until double in size. This should not take longer than an hour to happen. Roll out the dough and make the filling In a small bowl, combine together the butter, Splenda and the cinnamon. Set this aside. Punch down your dough and then roll it out onto a large floured surface.I like to do this on parchment paper to make for an easier roll-up and clean up. Roll this out to about 1/2" thick or to the thickness that you prefer for your rolls. Now spread the cinnamon butter mixture from the bowl that you had just set aside onto the rolled out dough. We will now roll up the dough that we just placed the cinnamon butter on top of. Roll the dough up, pinching the sides of the dough as you roll it up. Prep the pan that you will use to bake these in for nonstick. Slice the rolled up dough into 12-15 slices. Take each slice and place it cut sized down into your prepped pan. Allow this to rise again until doubled in size. Preheat your oven to 350. Bake the rolls for 25-30 minutes or until browned. Remove from oven, allow to cool. To make glaze, in a small bowl, combine the Splenda and cornstarch. Mix with a whisk or fork. When a powder has formed, stir in the liquid ingredients. Coat the cooled buns with the glaze. Enjoy!😋

"Chilli Lime Chicken and Baked Potato Chips ~ Credit @whenharrymetsalad - 1 Chicken Breast 2 Handfuls Baby Leaf Spinach 1 Medium Baking Potato 1 Cup Mushrooms Sliced 1/2 Red Onion Chopped 1/2 Red Bell Pepper Peri Peri Salt Black Pepper For the marinade: 2 tablespoons Olive Oil 1 tablespoon apple cider vinegar 2 teaspoons chilli powder 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon salt ¼ teaspoon black pepper 2 tablespoons fresh lime juice Directions: Whisk together the Olive Oil, Vinegar, Chilli Powder, Garlic Powder, Onion powder, Salt, Pepper, and Lime Juice. Combine with chicken in a zip lock bag or small mixing bowl. Cover and chill for a minimum of 30 minutes. After marinading your Chicken. Preheat your oven to 180 degrees, line a baking tray with tin foil and drizzle with olive oil. Thinly slice the white potato, and spread it over the baking tray. Season with salt and pepper. Bake the potatoes for 30-40 mins. When the potatoes are beginning to crisp up, heat a large pan with olive oil. Add the marinaded Chicken to your pan and fry until golden on both sides, then add the chopped mushrooms, red bell pepper and red onion. Stir until fully cooked.
