Monday calls for mac n’ cheese! 🧀 One of my go-to meals when I want something quick, comforting, and carby, which is pretty much 24/7 these days 😌. I love this sauce because it’s super versatile — try it on noodles, zoodles, chicken, veggies... even pizza! — and can be easily frozen for those times when creamy pasta cravings call. Tonight we served it with spicy garlic shrimp + grilled spring asparagus. Sending hugs to all. Hope you had a great Monday! ❤️ - #whatsonmyplate: SHELLS WITH CREAMY GARLIC GOAT CHEESE SAUCE: in a blender, combine 1/2 cup @kitehillfoods regular cream cheese (can sub kite hill chive cream cheese or regular cream cheese) + 1/4 cup goat cheese crumbles • 1/4 cup almond milk + 1/2 teaspoon garlic powder + salt & pepper to taste; blend until smooth ). Toss with @eatbanza chickpea shells (or pasta of choice) •• SPICY GARLIC SHRIMP: season shrimp with @primalpalate jerk seasoning + paprika, then sauté in garlic ghee until pink and slightly brown) •• GRILLED ASPARAGUS W/PARMESAN.

Dreaming of this dinner tonight! 😍 Seared sea scallops, creamy cauliflower mash, sautéed greens, and blistered tomatoes look fancy take just 30 minutes from start to finish to face plant (really!) 💯. Unlike chicken and beef, which seem to always be either undercooked (or overcooked (dry chicken breast is the *worst* amiright), scallops are pretty much foolproof, sear in under 6 minutes, and make you feel like a domestic goddess 👸🏼. Tell me in the comments below! ❤️ - #whatsonmyplate: SEARED SCALLOPS: heat 1 tablespoon @fourthandheart garlic ghee in a pan for a minute, add 1 lb. sea scallops (make sure to pat them VERY dry with paper towels first); sear 2-3 minutes per side •• CREAMY CAULIFLOWER MASH: 1 head cauliflower + 3 garlic cloves + 2 tablespoons ghee (or butter) + 3-4 tablespoons milk (I use almond) + 1/4 cup parmesan + salt & pepper, to taste. Place cauliflower and garlic in a steamer over a large pot of water; steam until tender. Transfer to a food processor and add remaining ingredients. Blend until smooth •• sautéed spinach w/ garlic & parmesan cheese • pan-blistered tomatoes.

They’re perfect: crinkly top, gooey fudge middle, oh baby. Shared what I did based on what I had in the house and they were shamazing. INGREDIENTS 2 @vitalfarms eggs 1/4 cup @thrivemarket maple syrup 1 cup @seedsofcollaboration tahini 1 tbs coconut oil 1/2 cup @bobsredmill coconut sugar 1 teaspoon vanilla extract 1/3 cup @ghirardelli cocoa powder 1 tbs @bobsredmill coconut flour 1 scoop @ancientnutrition collagen peptides (optional, I added for protein) 1/2 tsp baking soda pinch of salt 1/2 cup chopped @evolvedchocolate Signature dark chocolate . . Chocolate drizzle (optional) 1/4 cup @evolvedchocolate chocolate 1 tbs coconut oil INSTRUCTIONS Heat oven to 350. Line 8x8 square baking pan with parchment paper. In a large bowl, combine wet ingredients until well mixed. Fold in dry ingredients - it'll be very sticky. Stir in chocolate chips. Spread batter evenly in pan. It helps to get a silicon spatula wet and spread the batter flat. Bake for 18-24 minutes or until toothpick comes out with a few wet crumbs. You definitely want a fudge-factor going on, so don't over bake them! Let brownies cool. Melt together drizzle ingredients, then drizzle all over the brownies. DEVOUR.
