Gluten Free Carrot Cake with Cream Cheese Frosting Lasted less than 12 hours in my house. Here’s how to make it: In a mixing bowl, whisk together 2 whole eggs, 3/4 cup almond milk, 2/3 cup maple syrup, 1/2 cup olive oil, and 1 tsp vanilla extract. In a separate mixing bowl, sift together 2 cups 1:1 gluten free baking flour (i used @bobsredmill), 1 1/2 tsp cinnamon, 3/4 tsp nutmeg, 1/4 tsp salt, 1 tsp baking powder, and 1/2 tsp baking soda. Slowly add the wet ingredients to the dry ingredients and mix until everything is well combined. Fold in 2 cups grated carrots and 1/2 cup pecans pieces. Pour batter into a greased or lined 8x8 square baking dish. Bake for 50 minutes or until a toothpick comes out clean. Let cool. To make the frosting, use a handheld mixer to beat together 1/4 cup cream cheese, 1/4 cup softened butter, 2 cups confectioners sugar, and 1 tbsp almond milk. Frost, slice, and enjoy! Subs: Milk: sub your milk of choice Maple syrup: sub a granulated sugar Olive oil: sub melted coconut oil, melted butter, avocado oil, or any liquid vegetable oil Flour: sub all purpose, whole-wheat, or oat flour. I haven’t tried using almond flour or coconut flour! Pecans: sub nut of choice or coconut flakes Butter: sub a vegan butter Cream cheese: sub a vegan cream cheese Baking dish: you can use a 9x9 baking dish or you could try making cupcakes. if making cupcakes, the cook time will be less!

Meals have been a lot of “let’s get creative of what’s left in the fridge” & it’s not always ideal, but it’s fun🌮 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ C & I have made shrimp and portobello tacos together (& margaritas!) the last few weekends. We make our own pico, guac, & aioli which is what realllly makes the tacos great 😛 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ While we usually finish the tortillas, we always have extra of the sides - so this week I threw together mushroom tacos with the extra pico, guac and aioli for lunch. It’s important, in this time and all of the times, to work towards #NoFoodWaste . A goal of mine for 2020 🌞 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets- romaine tacos with garlic sautéed mushrooms, fresh guac & pico, black olives, & an aioli made from mayo, hot sauce, garlic, & taco seasoning 🌮

Wanted to jump on the Dalgona coffee trend ☕️ ⁣⁣⁣ ⁣⁣⁣ I personally found it very strong however if you like your coffee strong then this is perfect for you!! ⁣⁣⁣ ⁣⁣⁣ Ingredients ⁣⁣⁣ ⁣⁣⁣ • 2 tbsp instant coffee ⁣⁣⁣ • 2 tbsp sugar ⁣⁣⁣ • 2 tbsp hot water ⁣⁣⁣ • milk ⁣⁣⁣ • Ice cubes ⁣⁣⁣ ⁣⁣⁣ Method ⁣⁣⁣ ⁣⁣⁣ 1. Whisk together the coffee, sugar and water till it forms soft peaks.⁣⁣⁣ 2. Pour 3/4 milk and some ice cubes into a glass ⁣⁣⁣ 3.
