Ingredients 6 tortillas 1/2 onion chopped 2 cloves of garlic minced 1 bell pepper chopped 2/3 cup black beans cooked from dry or canned 1/2 cup corn fresh, frozen or canned 1 cup fresh mushrooms sliced 1 tbsp oil divided 1 tbsp soy sauce or coconut aminos spice mix: 1 tsp onion powder, 1/2 tsp cumin powder, 1/2 tsp (ground) oregano, 1/4 tsp smoked paprika, 1/3 tsp red pepper flakes salt and pepper to taste 1 batch easy vegan cheese sauce Instructions Heat 1/2 tbsp oil in a pan, add 1 tbsp soy sauce, onion, garlic, pepper, and mushrooms and fry over medium heat for 3-4 minutes. Add the corn, black beans, and spice mix and fry for a further 3-4 minutes. Make a batch of my easy vegan cheese sauce and spread some of it in an even layer on one tortilla. You can use any other vegan cheese of choice. Add a layer of the veggie mixture (about 4 tbsp) and place another tortilla on top. Transfer to a (lightly oiled) skillet and cook for about 2-3 minutes, flip and cook from the other side until both sides are nicely browned and toasty. Repeat steps for the remaining tortillas. Cut into 4 pieces and enjoy hot!
Don’t know about you guys but I’m still into banana bread even after 23502 days of isolation. This one bowl banana bread is delicious, filled with wholesome ingredients and hits the spot anytime. Enjoy your Friday guys 💋 Dry ingredients 1 cup oat flour 1 cup whole wheat flour 1/4 cup coconut sugar 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon sea salt Wet ingredients 3 medium bananas mashed 1/3 cup coconut yoghurt 1/4 cup sunflower (or any neutral) oil 1 1/2 teaspoon vanilla extract 2 flax eggs (2 tablespoons flax powder mixed with 6 tablespoons water and allowed to form a gel for 10 minutes) To top One sliced banana 1/4 cup chocolate chips Preheat your oven to 180c and line your loaf pan with baking parchment In a large mixing bowl mash your bananas, then add your yoghurt, oil, vanilla and flax eggs. Mix to combine. Now add your dry ingredients and mix everything to combine. Be careful not to overmix. Vegan Stuffed Cheesy Bellpeppers Follow us @veganfoodsdelicious for Daily vegan recipes Photo and Recipe by @elavegan Ingredients 4 bell peppers 2 cups cooked rice of choice 1 cup textured soy protein or chickpeas 1/2 cup light coconut milk 1/2 cup chopped bell peppers (any color you like) 4 tbsp crushed tomatoes 1 medium-sized onion, chopped 2 cloves garlic, minced 2 tbsp Braggs aminos 1 tbsp oil (e.g. sesame oil or coconut oil) 1 tbsp peanut butter 1/2 tbsp curry powder 1/4 tsp smoked paprika salt and pepper to taste vegan cheese sauce (or your favorite vegan cheese) to taste chopped chives to taste Instructions Cook your favorite rice according to packaging instructions. You will need 2 cups of cooked rice for this recipe Soak 1 cup of textured soy protein (TVP) in a bowl with 1 cup of hot water (or vegetable broth) and set aside for 5-10 minutes (skip this step if you are going to use chickpeas). The TVP will begin to fluff and absorb all the liquid With a knife, carefully remove the "lids" of the 4 bell peppers and also discard all the seeds Heat oil in a skillet, add the chopped onion, minced garlic, the textured soy protein and fry for 4-5 minutes over medium heat Add the chopped 1/2 cup bell peppers, crushed tomatoes, Braggs, peanut butter, spices (curry, smoked paprika), salt/pepper to taste and coconut milk to the skillet and let simmer for about 5 minutes on low-medium heat. Stir occasionally Now add the cooked rice and check if the mixture needs more salt/pepper/spices Fill the 4 peppers with the rice/veggie mixture, add your favorite vegan cheese to taste or make my easy vegan cheese sauce, and cook in the oven at 190 degrees C (about 375 degrees F) for about 30-45 minutes. You will probably have some leftovers of the rice/veggie mixture Enjoy your stuffed vegan peppers!
