I shared this BUFFALO CHICKPEA SANDWICH on my IG stories a couple days ago and got so many questions on how to make it. When I told people what all I used, everyone was like “Whaaaaa? How! Are you sure?” 😂 ⠀ Yeah, when I took a bite of it and realized how amazing it was, I was shook too! It was so simple and all of the ingredients can be found at Walmart or a similar retailer! ⠀ Here’s what you’ll need to make the buffalo chickpeas: 🥪 1 can of chickpeas - drained and rinsed 🥪 1/4 cup of dairy-free mayo 🥪 1/4 cup of buffalo sauce (make sure there isn’t dairy in it) ⠀ Heres how to make it: In a bowl, combine the drained and rinsed chickpeas, the mayo and buffalo sauce. As you mix everything up, use a fork to smash some of the chickpeas. Serve with crackers or as a sandwich! Creamy dreamy roast cauliflower chickpea curry! Simple but super delicious - I’ve combined creamy coconut with a nutty roasted cauliflower and tasty fibre-packed grainy textured chickpeas for the ultimate feel-good-dish. I absolutely love the spice mix here, that includes fragrant cardamom, warming cinnamon and fennel seeds, which can be somewhat reminiscent of a typical korma base. RECIPE 👇🏽👇🏽 Save for later!! Vegan GF Friendly Tofu Nuggs are 🔥🔥 I was craving some easy comfort food and whipped up these crunchy tofu nuggets!! . INGREDIENTS: 1 block firm tofu, pressed 1 cup almond milk 1 ¼ cup almond flour 1 tsp salt ½ tsp garlic powder and onion powder  ¼ paprika  dash of pepper 1 cup breadcrumbs, GF is desired! . Directions:  Press your tofu to remove as much water as possible. You can do this by wrapping your tofu in a clean cloth and adding something heavy on top to press out excess water.  . In a bowl, combine the almond milk, almond flour, and spices. Mix well to form a nice thick batter!  . In another bowl add the breadcrumbs. . Cut your tofu into bite sized pieces. Dip each piece of tofu into the wet batter and then into the breadcrumbs, being sure to fully coat the tofu in the breadcrumbs.  Repeat that with all of your tofu pieces. For EXTRA crunchy nuggs, lightly spray with some oil on the top (after breading) for that extra crispy deliciousness! . If you're using an oven, bake tofu nuggs at 375F for 35-40 minutes, flipping them over after the first 20 minutes. If you're using an air fryer, bake nuggets at 375F for 25 minutes, shaking them halfway through.  . Roasted Chickpea wraps with vegan tzatziki❤️ Follow @vegandemocracy for daily vegan inspiration 🌱💚 👉@vegandemocracy 👉@vegandemocracy . . . For the roasted chickpeas 1 can of no sodium chickpeas Juice from 1 lemon 1 tsp of olive oil Pinch of oregano Pinch of salt Pinch of pepper For the Tzatziki 1 cup of veganaise Juice from 1/2 lemon 1 tbsp of red wine vinegar 2 tbsp of shredded cucumber 2 cloves of garlic pressed Tsp of olive oil Pinch of pepper Thumb size amount of fresh dill chopped (or more depending on your preference) For the wraps Pita bread Red onion, chopped Tomatoes, chopped Lettuce, chopped . Preheat oven to 350F. In a small bowl, mix the chickpeas in the lemon and olive oil. Add the spices then spread over a cookie sheet. Bake for 10-15 minutes or until chickpeas are roasted. While the chickpeas or cooking mix together all the ingredients for the vegan tzatziki. Place in fridge and let cool while you chop your veggies. Chop all your veggies for the wrap. In a small frying pan on medium heat, warm the pita breads to soften them. Once chickpeas are cooked, combine everything to the pita, wrap in a piece of parchment paper and enjoy. . . .
