Champagne, sea, sunsets & how about a little weekend wine education!?📖🥂⁣⁣⁣⁣ ⁣⁣⁣⁣ 8 commonly used French champagne terms explained by yours truly 💁🏻‍♀️⁣⁣⁣⁣ Practice pronunciation over your Saturday morning coffee or 11am glass of fizz! ⁣⁣⁣⁣ ⁣⁣⁣⁣ 1. “𝐌𝐞́𝐭𝐡𝐨𝐝𝐞 𝐓𝐫𝐚𝐝𝐢𝐭𝐢𝐨𝐧𝐧𝐞𝐥𝐥𝐞” aka “Champagne Method”/ “Traditional Method” - the method of creating bubbles pioneered in Champagne but now used for many sparkling wines all over the world. In a nutshell, there are two alcoholic fermentations. In the second fermentation the CO2 that is produced as a by-product of fermentation is trapped in the bottle & as it dissolves into the wine it creates bubbles!⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣ 2. “𝐋𝐢𝐪𝐮𝐞𝐮𝐫 𝐝𝐞 𝐓𝐢𝐫𝐚𝐠𝐞” is a liquid made up of wine, sugar, yeast & nutrients to catalyse the second fermentation. New yeast converts the new sugar into alcohol (fermentation) & the by-product of this is CO2 (see point 1!)⁣⁣⁣⁣ ⁣⁣⁣⁣ 3. “𝐋𝐢𝐪𝐮𝐞𝐮𝐫 𝐝𝐞 𝐄𝐱𝐩𝐞𝐝𝐢𝐭𝐢𝐨𝐧” aka “dosage” this is the wine & sugar added just before the Champagne is sealed with a cork & determines the final level of sweetness⁣⁣⁣⁣ ⁣⁣⁣⁣ 4. “𝐁𝐥𝐚𝐧𝐜 𝐝𝐞 𝐁𝐥𝐚𝐧𝐜𝐬” white from white - made from white grapes only (e.g Chardonnay)⁣⁣⁣⁣ ⁣⁣⁣⁣ 5. “𝐁𝐥𝐚𝐧𝐜 𝐝𝐞 𝐍𝐨𝐢𝐫” as above, but for only from black grapes (e.g Pinot Noir, Meunier)⁣⁣⁣⁣ ⁣⁣⁣⁣ 6. “𝐏𝐫𝐞𝐬𝐭𝐢𝐠𝐞 𝐂𝐮𝐯𝐞́𝐞” this is the label given to the best Champagne in a producer’s collection eg. Möet & Chandon’s Dom Perignon label⁣⁣⁣⁣ ⁣⁣⁣⁣ 7. “𝐁𝐫𝐮𝐭” the residual sugar in the wine must be within 0-12 grams per litre. Note “Extra-Brut” may have between 0-6 grams per litre. As there is an overlap between the classifications for 0-6 grams, producers have labelling options🥂⁣⁣⁣⁣ ⁣⁣ 8. “𝐁𝐫𝐮𝐭 𝐍𝐚𝐭𝐮𝐫𝐞” no “Liqueur de Expedition” can be added & the residual sugar must be less than 3 grams per litre. Monkish / Trillium Pipeless Whirlpool Triple IPA 10.0% ABV — First sip is quite abrasive with herbal pine at the forefront. As it warms it slowly turns into another juicy Monkish monster. Tropical, citrusy, herbal and incredibly well balanced with no hint of the ABV. Dense mouthfeel. If we're nitpicking, then the finish is slightly chalky and a bit harsh, but aside from that, it's another banger whipped up by the hop wizards from Torrance. — 4.5 / 5

What is it about frozen drinks that make you feel so fancy? Summer time is fast approaching which means time for alllll the frozen cocktails! This year I want something different than frosé or frozen margs...so we’re going to make this prosecco lemon granita instead! Bonus points if you serve it out of a lemon 🍋 ! Prosecco Lemon Granita (Makes 2) ◽️1 1/2 cups Prosecco ◽️2 large lemons ◽️1/4-1/3 cup of honey Scoop the flesh out of 2 lemons and strain the juice into a bowl. Muddle or use a wooden spoon to get out all the juice. Add Prosecco and honey and whisk to combine. Taste to ensure the sweet/tart balance is to your liking. Freeze for 3-4 hours, stirring every 30 minutes. It will be slightly slushy. Serve in lemon cups if you’re feeling fancy.
